Without adequate kneading, your bread won’t be as chewy, and it won’t rise properly. If you have a bread machine, the machine takes care of all of the kneading for you. Otherwise, you can knead the dough in a stand mixer or by hand.</p>
<p>Before you begin kneading your dough, you need some idea of what the end result should look and feel like. Because much of the bread-making process depends on variables &#8212; the type of flour you use, the strength of your yeast, the humidity level in your kitchen &#8212; no one recipe can tell you exactly how much flour and water to use or how long to knead your dough. These are factors that you will learn from experience. Ideally, after you knead your dough, it will be elastic and pliable. The surface of the dough should be smooth, yet slightly sticky.<br />

<p>To get your dough to the right consistency, you want to use the least amount of flour possible. Always add your flour in small amounts, mixing it thoroughly before adding more. If you are kneading your bread by hand, be aware that this technique requires more flour than if you make your dough in a stand mixer. If you live in a humid environment, you will need to add more flour to your recipe because the flour will absorb moisture from the air. The type of flour that you use will also affect the kneading. High-protein bread flours and whole wheat flours require more kneading time because they absorb moisture slowly. Be prepared to adjust your recipe slightly.</p>
<p>Start by mixing about half of the flour called for in your recipe into the water and yeast. Stirring the dough with a wooden spoon, add a small amount of the remaining flour. Keep adding small amounts of flour until the dough is too thick to stir. Lightly flour your hands and your working surface. Because countertops are a bit too high to get good traction on the dough, place a large cutting board on your kitchen table. Place the dough on the working surface. Fold it in half, bringing the far end of the dough toward you. Press the heels of your hands into the dough, applying the weight of your body to the dough. Turn the dough a quarter of a turn and repeat the process. Keep folding, pressing and turning for approximately 10 minutes. Add more flour, a little bit at a time, to keep the dough from sticking. If at any point you get tired, you can let the dough rest for a few minutes before continuing.</p>
<p>Stand mixers make kneading much less physically exhausting, and they have the added benefit of requiring less flour. Start by placing half of the flour along with all of the yeast, water and salt called for in your recipe into the bowl. Using the paddle, mix the dough on low, gradually adding small amounts of flour. When the dough forms a sticky ball, turn off the mixer and place your dough hook in the machine. If you don’t have a dough hook, however, you can continue using the paddle. Turn the machine to medium and let it knead the dough for about eight more minutes. Then, turn the dough ball onto a lightly floured surface and knead the dough by hand for an additional minute.</p>

<p>For a clean flavor to go well with rice and citrus sauces, steam belt fish. Clean the belt fish fillets and place them on a steaming rack. Top them with simple ingredients such as crushed garlic, grated ginger, sliced scallions and crushed red pepper. Steam the fish for about 10 minutes, or until opaque in the center. You do not need heavy sauces because steaming allows the flavor of the ingredients to soak through the belt fish, creating tasty juices.</p>
<p>Broiled belt fish has a lightly charred exterior with a richness that adds a burst of flavor with every bite. Preheat the broiler and place the belt fish fillets on an aluminum foil-lined baking sheet. Skinless fillets work best. Sprinkle them with bold seasonings such as salt, pepper, garlic powder and onion powder. For a crunchy exterior, add a pat of butter or low-fat butter substitute to the top of the fillets. Add the fillets to the skillet and cook them for three to four minutes per side, or until flaky. Immediately before you remove the fillets from the skillet, add a squirt of lime or lemon juice to each as a garnish.</p>
<p>Baked belt fish tastes best with a flavorful breading to keep its delicate meat moist. The breading crisps for a pleasant contrast in texture. Preheat the oven to 400 degrees Fahrenheit. Coat skinless belt fish fillets in beaten egg and roll them in seasoned breadcrumbs. For a tangier flavor, use low-fat mayonnaise instead of the beaten egg. Place the fillets in a lightly greased baking pan; use low-fat cooking spray to reduce calories. Bake the belt fish until the internal temperature reaches 145 F, or about 10 minutes.</p>
<p>Smoked belt fish is smooth and pleasant with flavor infused through every bite of the fillets. Skin-on belt fish fillets work best. Use a lightly flavored wood, such as alder, for the best taste. Preheat a smoker to 150 F per manufacturer’s instructions. Smoke the fillets for one hour and then increase the heat to 200 F. Cook the fillets for an additional two hours or until they reach a temperature of 165 F in the center.</p>

<p>Your body keeps a check on blood sugar levels by releasing the hormone insulin into the bloodstream whenever blood sugar levels become elevated. Pasta made from semolina, farina and refined durum wheat flour are digested more quickly than pasta made from whole-grain durum wheat. The speed at which pasta and other simple carbs made from refined flour products are digested influences your blood sugar levels and contributes to those sugar highs and lows that deplete energy and trigger hunger. Eating these products over an extended period can contribute to obesity and damage health.<br />

The way you cook pasta can contribute to elevated blood sugar. The longer you cook it, the softer pasta becomes. The carbohydrates in pasta softened by cooking break down rapidly during the digestive process, causing an increase in blood sugar levels. According to Joan Marie Warner, MS, RD, CDE, Utah Department of Health, pasta cooked for 40 minutes is considered to have a high Glycemic Index rating; pasta cooked for 15 minutes has a medium GI rating, and pasta cooked for about 6 minutes has the lowest GI rating. The Glycemic Index rates carbohydrates according to the rate at which they raise blood sugar levels.</p>
<p>You can delay the increase in blood sugar levels by combining pasta made from refined flour with other foods, such as vegetables, grated cheese or olive oil. A study published in the European Journal of Clinical Nutrition in February 2003 compared the effects of pasta meals with and without added fiber and fat on blood glucose – blood sugar levels. Pasta meals containing 30 grams of polyunsaturated fat and 3 grams of sodium propionate fed to one group of study participants delayed the rate of digestion and decreased bloodstream levels of glucose and insulin compared with study participants eating pasta without fat.</p>
<p>Whole-grain pastas contain more vitamins, minerals and protein than white pastas, according to Kansas State University. However, enriched white pasta contains some nutritional benefits, such as iron and B vitamins. Because pasta is a plant protein, it does not contain one or more amino acids necessary for it to be considered a complete protein. Animal sources of protein are complete proteins. Make your pasta meal a complete protein by topping it with grated cheese or eating it with low-fat meat, chicken or fish.</p>

<p>If you suffer from abnormal nerve sensations that might indicate damage to your ulnar nerve, seek medical attention. Your doctor can perform medical tests to determine whether you suffer from a food allergy that&#8217;s causing the nerve damage, or from another underlying condition. Although some seniors may be less mobile than younger players, they can still learn to play the game and accrue numerous health benefits from it, including improved cardiovascular health and bone density. Instructing seniors on how to play tennis is no different than teaching anyone else the sport, but you should pay particular attention to the level of your students and pace the lessons accordingly.</p>
<p>Before any physical activity, a proper warm-up helps improve blood circulation and get the muscles ready for movement. Seniors may need up to 15 minutes of marching or jogging in place, laps around the court or casually hitting balls to one another or against a wall.</p>
<p>If your senior students are brand new to the game, show them the basic grips and strokes used in play. Demonstrate proper hitting techniques and have students mirror the movement with their racquets. Once the students have a good idea of how to move the racquet through the air, have them practice with tennis balls. More experienced players may participate in lesson plans that<br />

involve dealing with specific situations that can occur in play. Senior players can participate in advanced drills if their abilities allow it.</p>
<p>If your students have trouble moving quickly, stay close when feeding them balls. A ball machine allows you to adjust the speed and intensity of the volleys while staying on the same side of the net as your students. You can offer better coaching and correctional cues when nearby.</p>
<p>While any student may have health problems or physical limitations, these may be more common among senior participants. You will have to design drills and lesson plans around your players’ capabilities &#8212; not your goals. Ask your students to fill out a liability form and medical information questionnaire prior to play so that you&#8217;re fully informed. Seniors sometimes have hearing difficulties, so you may have to speak a little louder when giving instructions. Remember to keep the lessons light and fun. Many participants’ goals may be socially driven &#8212; include games, music and lighthearted attitudes to encourage continued participation.</p>

Generally, 1 cup of dried fruit will make approximately 1 1/2 cups of reconstituted fruit, according to the Virginia Cooperative Extension. In certain recipes, it isn&#8217;t necessary to reconstitute dried fruit because the recipe has enough moisture to cause the dried fruit to plump up during cooking or baking, such as a moist stuffing for turkey made with dried cranberries, or adding raisins to oatmeal cookies.</p>
<p>Reconstituting dried fruit may take from one to eight hours depending on the type of fruit, the size of the pieces and the water temperature. Using hot water speeds up the process, and smaller pieces of fruit reconstitute more quickly than large pieces. The basic method is to put the dried fruit in a container and add enough water to just cover the fruit. Using too much water can cause a loss of flavor. <p>Washing guava removes dirt and potential insecticides from the exterior of the fruit. Rinse the guava beneath warm, running water and scrub the exterior lightly with a stiff brush. The peel is edible but has little flavor. Remove the peel with a vegetable peeler if you prefer not to eat it. Use a sharp knife to slice the guava in half, then into 1/8- to 1/4-inch-thick slices. Guava sliced at 1/4 inch is chewier than at 1/8 inch. Do not exceed 1/4 inch, though, because thicker guava slices may not dry correctly.</p>

<p>To prevent the guava from sticking, line a baking pan with parchment and preheat your oven to the lowest setting. Spread the guava on the baking pan in a single, even layer. Use more than one pan if necessary. Place the guava in the oven and prop the door open about 2 inches to allow for air circulation. Check the guava within four hours for 1/8-inch-thick slices or within six hours for 1/4-inch-thick slices. Continue checking the guava once an hour until the pieces are no longer moist and squishy. Remove the guava from the oven when crisp and allow it to cool for an hour. Alternately, follow the manufacturer’s instructions on a food dehydrator to dry the guava. Generally, you should arrange the guava in an even layer on the dehydrator’s tray and check it every hour.</p>
<p>Once the guava has cooled completely, transfer it from the baking pan to an airtight container. Seal the container and store it in a cool, dry place. Use the fruit within 12 months if you store the guava at 60 degrees Fahrenheit or lower. If you store it at temperatures between 60 and 80 degrees Fahrenheit, eat the guava within six months.
